First winter with these bibs, because they're a new model :-) I mainly ride my mountain bike in freezing weather (commuting and pleasure riding), but also on gravel to some extent. I wear Supergiara Overshorts with the bibs, because they keep the cold air nicely away from the hip area.
GORE-TEX INFINIUM™ fabric works like a Swiss watch in active winter riding. The fabric breathes, but is windproof. I'm not a cold weather superhero who rides in a t-shirt and shorts in freezing temperatures. My fingers and toes get cold quite easily. However, the INFINIUM™ fabric jacket-bibs combo has surprised me positively and I went on a couple of hours of running in -15°C weather with just the Merino Tee Long Sleeve undershirt, and there was no need for underwear. Of course, there were no long breaks in the snow, and then an extra layer would have been required to stay there. My body stayed warm while riding, and the cold didn't bite me. When I pushed harder, the breathability of the fabric ensured that moisture evaporated and didn't accumulate in the fabric. When it got even colder, I wore a thicker merino shirt (PEdALED) under the jacket and Chiba Softshell pants over the bibs as an extra layer. Wearing those pants over your bibs will keep you comfortable even in freezing temperatures.
In previous winters, I rode in Fiandre Bibtights, which are made of Polartec® NeoShell® fabric. They also breathe well and are windproof, but at -10°C I started to need extra layers. So GORE-TEX INFINIUM is clearly a warmer option.
